Fig and Arugula Salad with prosciutto September 18, 2008

4 ripe figs
4 slices of prosciutto di Parma
1 mozzarella di bufala
Extra virgin olive oil
Balsamic vinegar

In a platter, prepare a bed of arugula. Quarter the figs, wrap each one in a slice of prosciutto and place them on the arugula. Cube the mozzarella and arrange around the prosciutto-wrapped figs. Add 2-3 drops of balsamic vinegar in the heart of each fig. Finish salad with a sprinkle of olive oil.
